Finnish Pancake

Now this is really delish, and also, like most of the recipes I use, very simple.  Unlike a normal flat pancake, this comes out more like a tart .  Good with either sweet or savoury, it is a favourite with my family, and for me to quickly whip up a plate that looks good and feeds many.

After coming out of the oven, it does tend to sink a litte, so make sure to time it well if you are wanting to impress friends or family.

4 eggs

2 1/2 cups milk

1/4 cup honey  (castor sugar could be used here )

1 1/2 cups flour

1 tsp salt

2-3 Tbs butter

Strawberry or berry jam,  or  fruit, honey and nutmeg to serve for topping


  • Whisk eggs with milk and honey
  • Sift flour and salt in large bowl
  • Whisk egg mixture  into flour mix until a thin batter
  • Let rest for 10 min.  It is thin, so don’t worry !!
  • Heat oven to 220 degrees celcius (425 F )
  • Put butter into a flattish dish with sides, and place into your hot oven for 5 minutes until the butter starts to brown
  • Remove pan, swirl butter to coat pan and pour in batter
  • Bake for 25 minutes until golden and slightly puffy
  • Cut into individual slices
  • Serve warm with dabs of jam on top, or fruit, honey and nutmeg
  • Can also be used with a savoury dish and sprinkle cheese or diced bacon on top.
